Tasty Yellow Split Pea Soup and Ham

Ingredients -

1 carrot, peeled, sliced and steamed for the garnish
2 quarts ham and vegetable stock
1 pound of yellow split peas, cleaned and rinsed
1 clove garlic, peeled and minced
½ small Vidalia onion, peeled and sliced
1 teaspoon dry mustard powder
⅛ teaspoon ground cloves
¼ teaspoon pepper
¼ teaspoon salt
Sprigs of parsley for garnish

Preparation:

Put the stock into a large saucepan and stir the peas in. Bring the liquid to a boil, stirring on occasion to move the peas around. Reduce the heat to medium low, boiling 5 minutes. Turn the burner off, stir the peas, and cover the pan. Let it sit for one hour.

Put the garlic and onion into the pan with the peas. Stir well and bring to a boil. Reduce the heat to low and cover the soup, lifting the lid only to stir the peas from the bottom every 15 to 20 minutes.

After an hour, put in the seasonings, stir, and cover. Continue to let the soup simmer for another hour, stirring as before.

Remove from the heat and let the mixture sit for 15 minutes. Meanwhile, steam the carrot slices on the stove or in the microwave. Puree the soup one cup at a time. Dish into the bowls and add the garnish.
