Ingredients -
½ pound of split peas
3 cups of chicken broth
3 cups of milk
⅓ pound of bacon
1 large onion
1 head of garlic
Chili pepper
Salt and pepper, to taste
Preparation:
Before the peas begin to cook, place them in a pot of fresh drinking water to soak. This helps to make it easier for the peas to disintegrate, and reduces cooking time as much as possible.
As the peas are soaking, place the chicken broth on the stove and bring it to a boil. Turn the fire down to low heat, and add the milk.
Once the milk begins to simmer, drain the water from the peas, and add them into the soup. Turn the heat higher in order to help the peas to cook faster.
Drop in a clean, unpeeled onion, as well as a head of garlic that has the peel still on. This makes it easier for you to fish them out in the end.
As the soup is cooking, chop the bacon into small pieces and fry it in a skillet. Cook until the bacon is crunchy, and pour the oil from the bacon into the soup. Set the bacon aside until the soup is thoroughly cooked, and drop the bacon in 10 minutes before you turn the fire off.
Just before you serve the soup, add a few pinches of chili powder, salt, and pepper according to your tastes, and scoop out the garlic and onion.
