Chunky Pea Soup and Sourdough

Ingredients -

½ pound of peas
½ pound of ham
1 large onion
1 head of garlic
2 potatoes
3 carrots
2 quarts of chicken broth
1 pack of yeast
3 ½ cups of warm water
7 cups of flour
¼ cup of milk powder
2 tablespoons of butter
2 tablespoons of sugar Salt Cornmeal

Preparation:

Dissolve the yeast in a bowl with 2 cups of warm water, and let it sit for a few minutes. Add 2 cups of the flour, and mix it well until the batter is smooth. Cover this mixture with a cloth and let it sit for 2 days. Do not forget to stir a few times a day.

To begin the soup, set the peas in a pot with water to soak for one hour.

As the peas are soaking, remove the cloth from the dough and add in the butter, sugar, milk powder, a cup and a half of warm water, and the rest of the flour. The resulting dough should be soft and pliable.

Punch the dough rather than kneading it, and divide the dough in half to make two loaves. Place the dough inside a baking sheet, sprinkle it with cornmeal, and place it inside the oven to cook for 35 to 45 minutes.

Once the loaves are inside the oven, drain the water from the peas and fill the pot with the chicken broth. Place the pot on the stove to boil, and bring it to a rolling boil.

As the chicken broth is heating, peel and dice the vegetables to add into the soup. Drop in the onion and head of garlic whole, and add salt and pepper as desired. Let the peas cook until they are soft, and scoop out the whole onion with a cooking spoon.
