There are many soups that you can prepare on a cold winter evening, but pea soup has always been a popular choice in the colder regions of the world. The reason for this is that green peas grow well even in colder climates, thus the peas are abundant in areas where fresh fruits and vegetables are not as common. Peas are rich in fiber, minerals, and other nutrients that your body needs in order to continue functioning properly, and you will find that eating a bowl or two of green soup on a cold day can help your body to stay warm against the cold and fight off the flu or colds.
The recipe for green pea soup below produces a delicious dish that will be rich and filling, making it the perfect dish for a cold autumn or winter evening. The peas are cooked in milk and chicken broth, thus infusing the peas with the delightful flavor of the liquids. A hunk of ham is diced and tossed into the soup to add flavor, and an onion and a head of garlic are cooked whole to infuse the soup with their unique taste. The entire soup is cooked until the peas are soft then blended to make a tasty, creamy green pea soup. By adding salt, pepper, and a pinch of crushed red pepper to the soup, you have the perfect dish to enjoy on a cold winter evening.
When the weather around you is cold, your body has to burn more energy in order to stay warm. Your body consumes up to 1000 calories more per day in extremely cold weather, thus you will need to eat more food that is rich in calories in order to remain healthy during the chilly seasons. For this reason, pea green soup is such a popular choice, as the legumes are high in calories. The ham and milk added to the soup help to further increase the number of calories in your meal, thus providing your body with more energy to burn in order to stay warm.
Ingredients -
½ pound of green peas
½ pound of ham
1 large onion
1 head of garlic
2 quarts of chicken broth
1 quart of milk
Crushed red pepper
Salt and pepper, to taste
Preparation:
It is best if you soak the peas for an hour or two before you cook them, as that cuts down the actual cooking time required by the peas. Soaking them in fresh water will make them easier to cook.
Once the peas have soaked for an hour or so, drain the water and place the pot on the stove. Fill the pot with the milk and chicken broth, and turn the heat on high.
As the soup is heating up, peel the onion and garlic to be added to the soup. Cut the onion in half before adding it to the pot, but leave the cloves of garlic whole.
Chop the ham into bite-sized chunks, and fry it in a skillet. Cook the ham until it is slightly crispy, and add it to the soup.
Add a pinch of crushed red pepper, 2 teaspoons of salt, and 2 more of pepper. Let the soup cook for 45 minutes to 1 hour, or until the peas are soft.
Use a food processor or stick blender to blend the peas and soup into a creamy liquid, and let the soup continue cooking for 15 minutes more.
