Simple Pea Soup

The best thing about pea soup is that it is so filling and nourishing, and you will find that there are hundreds of delicious recipes for pea soup that you can follow. The following recipe for pea soup is very simple, and it will require only minimal effort on your part. The peas are cooked in water with a head of garlic and a whole onion added for flavor. The peas cook for a long time until they have almost disintegrated, after which you add a bit of cream and some fresh mint. As the peas are cooking, you can add a slab of bacon to add some flavor to the soup, which you will then top with some fresh homemade croutons. All in all, you get a tasty recipe that is easy to follow and delicious to eat.

You will find that getting your children to eat peas is no longer a challenge with this soup, as they will love the creamy texture of the soup. Creamy Pea Soup

Ingredients -

½ pound of peas
6 ounces of sour cream
¼ pound of bacon
1 large onion
1 head of garlic
1 bunch of fresh mint
Salt and pepper, to taste

Preparation:

To begin, place the peas in water to soak for 1.5 hours. Soaking the peas before cooking them ensure that they will cook much faster and will be softer.

Once the peas have soaked, drain the water and refill with fresh drinking water. Place the peas on the stove to boil, adding the onion and head of garlic whole. Add the slab of bacon as well, and sprinkle salt and pepper to your heart’s content.

The pea soup will take over an hour to boil, so you have time to whip up some delicious homemade croutons. Cut a large loaf of bread, preferably stale, into small bite-sized cubes. Melt a 4 ounce stick of butter on the stove, and pour the melted butter over the bread cubes. Sprinkle salt, garlic powder, thyme, oregano as desired, and place in an oven heated to 300 F to cook until golden brown.

Once the peas start boiling, remove the garlic and onion from the soup, and throw them into the trash. Remove the slab of bacon from the soup, and chop it into small pieces to add to the soup once more.

Once the peas are cooked, add the sour cream to the mixture, and garnish with the fresh mint as desired. Serve with your fresh homemade croutons.
