Pea Soup Rosemary Cream

Pea soup is one of the tastiest dishes that you can prepare for your family, and one of the most nutritious as well. Peas, like all legumes, are full of fiber, and fiber is a nutrient that is needed for heart health, the health of your digestive system, and your overall wellbeing. Getting as much fiber as possible is essential for staying healthy, and you will find that consuming, as much fiber through dishes like pea soup will help you to have a healthy life. However, pea soup is not only extremely healthy, but you can make it incredibly tasty as well.

The following recipe for pea soup is a fairly simple one that calls for peas to be cooked for a couple of hours. The peas are soaked in water beforehand to make them easier to cook, and they are boiled with a bit of salt, pepper, and chili powder. However, before the peas have finished cooking, they are transferred to a pot containing boiling milk and chicken broth, and thus the pea soup becomes creamy and tasty. With a few homemade croutons that you can easily whip up in your oven, you will find that this delicious dish is complete with as little work as possible.

The beauty of dishes like pea soup is that they require very little work on your part. All you need to do is soak the peas, put them on the stove to boil, and add them to the milk and chicken broth when they are nearly done. Letting the peas soak for a couple of hours before you start boiling them, you will make them cook much faster and be much softer. You barely have to do any work in order to prepare this simple dish, and you will find that this is one of the easiest meals that you can prepare.

Creamy Pea Soup with Homemade Croutons

Ingredients -

½ pound of peas
4 quarts of water
3 cups of milk
5 cups of chicken broth
Chili powder
Salt and pepper, to taste
1 loaf of stale bread
1 4 ounce stick of butter
Basil
Thyme
Garlic powder
Rosemary

Preparation:

To begin, place the peas in a pot with 1 quart of water. Let this pot of water soak for a couple of hours to make the peas easier to cook.

After a couple of hours have passed, drain the water from the pot and refill it with fresh drinking water. Place the peas on the stove to cook. You can add a whole head of garlic and an onion to the peas, but do not peel them or remove the skin.

Place the peas on the stove to boil for 45 minutes.

As the peas are boiling, cut the stale bread into small, bite-sized cubes. Melt the butter on the stove, and stir in the basil, rosemary, thyme, garlic powder, salt, and pepper. Pour this mixture over the bread cubes, and be sure that they are as evenly covered with melted butter as possible. Place them in an oven heated to 300 F, and cook until the croutons are golden brown.

In a separate pot on the side, place the milk and chicken broth to boil. Once they are simmering, turn the fire down low.

Drain the water from the peas, and pick out the head of garlic and the onion. Pour the drained peas into the boiling chicken and milk, and let them finish cooking. Add salt, pepper, and chili powder as desired, and serve with the croutons.
