Light Pea and Pumpkin Soup

Pumpkin and Pea Soup

Ingredients -

½ pumpkin
½ pound of peas
2 quarts of chicken broth
Salt and pepper, to taste

Preparation:

To begin, cut the pumpkin into small cubes. Cut the rind away from the cubes of pumpkin and place the pumpkin in a pot of water to boil.

As the pumpkin is boiling, place the peas on a pot of fresh water to soak.

Let the pumpkin boil for half an hour, and use a blender to puree it.

Once the pumpkin has boiled and been pureed, drain the water from the peas and refill the pot of water with the chicken broth. Place the broth on the stove to boil, and let the soup heat to a simmer before adding the pureed pumpkin. Drop in a whole onion and a head of garlic to add flavor to the soup.

Let the peas cook for an hour or so, and add the salt and pepper for flavor.

Once the peas are nearly cooked, use a cooking spoon to scoop out the onion and garlic.
