Ingredients -
⅔ pound of peas
⅓ pound of bacon
1 large onion
1 head of garlic
3 whole sticks of celery
Fresh mint
Fresh basil
Thyme
Oregano
Chili powder
Salt and pepper, to taste
Preparation:
Before you can begin cooking the peas, you will need to boil them. Boiling the peas ensures that they will cook much faster, and thus they will disintegrate without the need to blend or puree them by hand.
Let the peas soak in fresh drinking water for an hour. Once the peas have soaked long enough, drain the water and refill the pot with fresh drinking water.
Place the pot on the stove and turn the heat on as high as possible to bring them to a boil.
As the water is heating, peel the outer layer from the onion and drop it into the soup. Ensure that all of the dried and flaking skin from the head of garlic is removed, and add it to the soup as well.
Cut the leaves from the top of the celery, and dice the celery to be added to the soup along with the leaves.
Dice the bacon as small as possible, and cook it in a skillet on the side. Cook until crispy, and add it to the soup as well.
