Ingredients -

½ pound of peas
1 quart of milk
½ quart of chicken broth
⅓ pound of bacon
⅔ pounds of leeks
1 head of garlic
Salt and pepper, to taste

Preparation:

In order to reduce the amount of time the beans will need to cook, soak them in water for an hour before placing them on the stove to boil. This helps them cook faster and disintegrate more easily.

Once the peas have soaked for an hour, drain the water and add the chicken stock to the pot.

Place the pot on the stove to heat, and bring the chicken stock to a simmer.

As the chicken stock is heating, dice the leeks as small as possible, and add them to the pot of chicken broth to cook along with the peas.

Once the broth is simmering, add the milk to the broth and bring it to a boil.

When the milk begins to boil, add in the bacon, garlic, salt, and pepper. Do not cut the garlic into small pieces, but simply throw in the entire head.

Let the peas cook until soft, and remove the head of garlic before serving. Chop the bacon into small pieces and place in each individual bowl.
