Creamy soups are always a popular dish, especially for children who find that soups just are not what get them out of bed in the morning. Most children will prefer a creamy vegetable soup over a watery one, as the flavor of cream helps them feel that they are not just eating the hated veggies they try to avoid on a daily basis. If your child is having problems eating his or her vegetables, you may find that whipping up a simple cream soup is the best way to help them eat those collard greens or peas that they always try to get out of eating.
The following recipe for cream of green pea soup is a simple one that calls for green peas to be cooked alongside spinach. The spinach helps to mask the taste of the peas that your child does not enjoy, and the creamy flavor serves to make the dish delicious and filling. Boiling the peas in chicken broth helps to make it much more enjoyable, and adding the flavors of garlic and onions to the soup is guaranteed to get the kids to eat it. If you add a spoonful of sour cream to the dish as you serve it to them, you will find that they will eagerly gobble down the soup.
Getting kids to eat their greens is not all this soup is good for, but you can even eat this soup when on a diet. Obviously you will need to change some of the ingredients in the soup, such as replacing chicken broth with vegetable broth and sour cream with no-fat cream. Still, the fiber and nutrients in the spinach and peas are more than enough to give your body the boost it needs as you work on losing weight, and the antioxidants in the spinach and peas go a long way in building up your immune system. All in all, this is one of the healthiest soups that you cannot eat.
Ingredients -
½ pound of green peas
1 pound of spinach
1 large onion
1 head of garlic
2 quarts of chicken broth
Sour cream
Salt and pepper, to taste
Preparation:
Before you boil the peas, you may want to consider soaking them for an hour or two. This helps them to cook much faster, thus reducing the amount of time you have to keep checking on the peas to ensure that they do not burn.
Once the peas have soaked, drain the water and place the pot on the stove. Fill the pot with the chicken broth, and turn the heat to high.
Peel the first layer from the onion, and cut it in half. Peel each clove of garlic individually, and add them and the onion into the soup.
Wash the spinach thoroughly as the peas are cooking, and add it to the pot to cook alongside the peas.
Once the peas and spinach is thoroughly cooked, use a food processor or stick blender to puree the ingredients.
Stir in a few spoons of sour cream, and add salt and pepper according to your taste.
Serve into individual bowls, and add a spoon of sour cream to eat bowl.
(Serves 5)
